Ningxia is in northwest China and in the middle and lower reaches of the Yellow River. It is bordered by Gansu to the south, Shaanxi to the east, and the Inner Mongolia Autonomous Region to the north, and it is one of the five ethnic minority autonomous regions in China.

The Hui population accounts for about one-third of the total population of the autonomous region. Mosques of all sizes are everywhere in Ningxia and Eid al Fitr is regarded as the most important festival.

Hand-Grabbed Lamb (手抓羊肉)

This is the dish you CANNOT miss! Lamb ribs are simply boiled with just ginger and spring onion – no heavy spices needed. The meat is so good that you eat it with your hands, dipping in vinegar or chili powder. Try it at Lao Mao Shou Zhua, a 100-year-old restaurant!

Spicy Huhu (辣糊糊)

A unique Yinchuan street food! It's like a thick, spicy hot pot where skewers of tofu, potatoes, and noodles are coated in a magical chili, peanut, and sesame sauce. Perfect for adventurous eaters!

Eight Treasure Tea (八宝茶)

Not exactly a food, but you MUST drink this! It's a sweet, aromatic tea with goji berries, dates, longan, walnuts, rock sugar, and more. Each sip is a party in your mouth.
